One of my favorite summer foods is baked beans. I’m working on the ‘perfect’ baked bean recipe, haven’t gotten there yet but this one isn’t bad.

The only really odd ingredient is the vegan bacon bits. ‘Bacos’ or some other kinds of fake bacon that you can buy to put on a salad are actually made from soy and, hence, vegan. Read those labels!

  • 1 lb dried navy beans
  • 1/4 cup vegan bacon bits
  • 3 tbsp brown sugar
  • 3 tbsp catsup
  • 3 tbsp molasses
  • 1 onion, chopped
  • 1/2 tsp mustard
  • 2 cups water

Wash the beans and let soak for about eight hours. Rinse and drain. Combine ingredients in a pressure cooker and bring to pressure. Cook for about 40 minutes. Make six servings.
