Quick Hoppin’ John

One of my newest weapons in the battle to eat better at home is a pressure cooker. And I’ve come up with the following recipe for that Carolina beans and rice dish, Hoppin’ John. It’s traditionally eaten on New Years Day for good luck, but I like it year around. It’s low fat, low GI and, of course, vegan.

  • 1 onion, chopped
  • 1 cup black-eyed peas, uncooked
  • 1/2 cup brown rice, uncooked
  • 1/2 cup hulled barley, uncooked
  • 1 14 oz can diced tomatoes, undrained
  • 4 cups water
  • 1 T Old Bay seasoning
  • 1 t garlic powder
  • 1/2 t dried basil
  • I sometimes throw in a little bit of wild rice if I have it on hand. Toss everything into the cooker and bring it up to pressure. Cook for 20 minutes and allow the pressure to release slowly.

    The only real prep work is chopping the onion and that only takes a couple of minutes. Past that I can go and do something else while this cooks and then enjoy a tasty meal.
